  • 1 lb skinless and boneless chicken breasts, cut into strips ¼ inch thick
  • 2 big ruby-red or pink grapefruits
  • 1 tsp dry mustard
  • 1 tsp garlic powder
  • 1 tsp cinnamon ground
  • 1 tsp coriander ground
  • 1 tsp ginger ground
  • 1 tsp pepper freshly ground
  • 1/4 cup creamy natural peanut butter
  • 2 tbsp reduced-sodium soy sauce
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/4 tsp hot sauce, or to taste
  • 8 cups romaine lettuce roughly chopped, (about 2 hearts)
  • Instructions:

    • Cut the grapefruit segments from the membranes surrounding, enabling them to drop in a small bowl.
    • Put the juice and the segment aside separately.
    • Line a baking sheet or broiler pan with foil.
    • Put the mixture on the prepared pan in one layer.
    • Then, whisk peanut butter, hot sauce, soy sauce and sugar in the reserved grapefruit juice until it becomes smooth.
    • Serve the salad with radishes on top and add the reserved grapefruits.
