Baked Codfish Recipe

Ingredients

  • Fresh codfish (1 dressed about 2 pounds)
  • Cooking oil (3tbsp)
  • Onion (1large)
  • Bay leaf (1)
  • Thyme (1/2tsp)
  • Marjoram (1/2tsp)
  • Pepper (1/8tsp)
  • Salt (1/2tsp)
  • Mushrooms (1 pound)
  • Lemons (3)
  • Sliced tomatoes (4)

Method Of Preparation:-

Baked codfish

Take fish, wash it and then pat dry it. Take a glass baking dish of medium size, place fish in it. Take a lemon, squeeze out its juice in a small bowl and then sprinkle it over the fish. Cut the rest of the lemons into slices. Decorate it with lemon slices and tomatoes. Take mushrooms, wash them and keep them around the fish in the dish. Then sprinkle salt and pepper over it. Add bay leaf, thyme and marjoram and rings of onions over the fish. Then sprinkle cooking oil over it. Cover the baking dish and place it in the oven. Now bake the fish for about 14 minutes on the highest settings. Then take out the baking dish from the oven and keep it covered for about 5 minutes. Now remove the cover and transfer it into a serving dish and serve it.

Baked Cod With Boursin Herb Cheese Recipe

Ingredients

  • Fresh cod fillets (2 pounds)
  • Shredded parmesan cheese (2tbsp)
  • Boursin cheese with herbs
  • At room temperature (1 package about 4 ounces)
  • Melted butter (2tbsp)
  • Salt and ground black pepper (to taste)
  • Diced tomatoes with garlic
  • Peppers and onions
  • Drained (1can about 14.5 ounces)

Baked Cod with Boursin Herb Cheese

First heat the oven to 200 degrees C or 400 degrees F. take a baking dish, spread 1 tablespoon of melted butter on the bottom of the dish to coat it. Then place the fish fillets in it. Pat dries the fillets with paper towels. Then take Boursin cheese and spread it equally over the fillets. Now pour the canned tomatoes mixture over the top of the fillets and then sprinkle pepper and salt, according to taste over it. Dust parmesan cheese on the top and then sprinkle the 1 tablespoon of butter over it. Now place the baking dish uncovered in the oven and bake fish at 400 degrees F for about 25 minutes. When the fish gets cooked then takes it out from the oven and serves it hot in a serving dish.

  • Cod fillets,
  • Washed and patted dry (1 ¼ pound)
  • Diced tomatoes
  • Drained (1can about 14.5 ounces)
  • Green bell pepper
  • Seeded and julienned (1)
  • Minced white onion (1/4c)
  • Garlic
  • Minced (2cloves)
  • Olive oil (1tbsp)

Method Of Preparation:-

  • Cod fillets
  • Skinned and pin boned (2 about 8 ounces)

First heat the oven to 425 degrees F. Take a dish of earthenware or a greased roasting pan. Place cod fillets in roasting pan and sprinkle olive oil over it and then season it. Then place basil, tomatoes, and slices of mozzarella on the top of the cod fillets. Sprinkle parmesan cheese and some olive oil over it. Now place the roasting pan in the oven and bake it at 425 degrees F for about 15 to 20 minutes until the fish gets a golden color. Ingredients

  • Cod (2lbs)
  • Olive oil (1/4c)
  • Sliced onions (2)
  • Milk (1/4c)
  • Butter (2tbsp)
  • Potatoes
  • Boiled in jackets (2lbs)

For Béchamel Sauce:-

  • Hot chicken stock (1 1/2c)
  • White pepper (1/8tsp)
  • Flour (1/4c)
  • Butter (1/4c)
  • Scalded milk (1c)
  • Egg yolk
  • Beaten (1 option)
  • Hard-cooked eggs
  • Sliced (8)
  • Tomato paste (2tbsp option) and salt (1/2tsp)

Method Of Preparation:-

Bacalhau Do Ceu (Heavenly cod)

Take boiled potatoes, peel them and then cut ¾ of them into slices and keep them aside. Mash the rest of the potatoes with milk and butter and keep them aside. Take a frying pan of 12 inches, heat oil in it and then cook onions in it until they get yellow color. Take codfish, cut it into small pieces and add them into the pan. Cook it over low heat for about 30 minutes.
For Béchamel Sauce:-     Take a pan, place it over low heat. Melt butter in the pan and then add flour, white pepper and salt in it. Then gently add scalded milk and chicken stock in it and then cook it by stirring regularly for about 3 to 5 minutes. Add tomato paste in it to give color and flavor to the sauce. Add beaten egg yolk to give yellow color to the sauce. Now heat the oven to 350 degrees F. Take a casserole of 2 quarts, grease it and place codfish in the layer, then onions, then potatoes layer, eggs and then spread béchamel sauce over it. Keep on spreading the layers until all the ingredients get used. Spread mashed potatoes on the top and then brush it with egg yolk. Now place the casserole in the oven and bake it at 350 degrees F. for about 45 minutes until the potatoes get golden brown color.

Ingredients

  • Cod fillets
  • cut into 4 pieces (1 ¼ pound)
  • lentils
  • picked through and rinsed (1c)
  • fat-free
  • low sodium vegetable broth (1c)
  • diced tomatoes (1 can about 14.5 ounces)

Take a large frying pan, place it over medium heat and heat oil in it and then sauté onions in it until they become soft and fragrant. Then add lentils, broth, and tomatoes in it. Keep it to boil then turn down the heat to low and keep it to simmer for about 20 to 25 minutes until the lentils become soft. Now add fish in it, cover the pan and keep the fish to cook for about 8 to 10 minutes until it gets flake easily with a fork. Then take off the pan from heat. Transfer the fish to a serving bowl and serve it with cooked rice.

  • Salted codfish (1 1/2lbs)
  • Hard-boiled eggs
  • Shelled cooked and sliced (3)
  • Extra virgin olive oil (1/2c)
  • Red wine vinegar (1/4c)
  • Thickly sliced head lettuce (1/2 optional)
  • Chopped tomatoes (2 meds.)
  • Red onion
  • Peeled and sliced into rings (1large)
  • Potatoes
  • Boiled cooled and chopped (3 to 4)
  • Freshly ground black pepper and salt (to taste)

Codfish Salad Recipe


Take codfish, wash it, put it in a saucepan and add water in it. Keep it to boil and then simmer it for about 5 minutes or until the fish becomes soft. Now take off the skin and remove the bones from the fish and then break it into small pieces. Take another bowl, mix codfish, potatoes, onions, lettuce, and tomatoes in it. Take a small bowl, mix vinegar, olive oil, pepper and salt in it. Then pour some of it over the mixture of codfish and then mix it until the salad gets coated well. Now add slices of boiled eggs in salad and mix them gently. Now pour the rest of the vinegar mixture over the eggs in the salad. Now the codfish salad is ready to serve.

Ingredients

  • Codfish (1 1/2lb)
  • Chopped pimento (3tbsp)
  • Chickpeas
  • Drained (1can about 16 oz)
  • Couscous (1c)
  • Salt (1/2tsp)
  • Orange rind (1tsp)
  • Water (1 1/4c)
  • Ground ginger (1/4tsp)
  • Ground coriander (1/4tsp)
  • Celery seeds (1/4tsp)
  • Black pepper (1/2tsp)
  • Salt (1/2tsp)
  • Paprika (1/2tsp)
  • Ground cumin (1/2tsp)
  • Lemon juice of (1lemon)
  • Olive oil (1 1/2tsp)
  • Prepared mustard (1 1/2tsp)

Take a large bowl; add mustard, celery seed, ginger coriander, lemon, pepper, salt, paprika and cumin in it. Mix all the ingredients well and then rub this mixture on both sides of the codfish. Take an ovenproof dish; place the codfish in it. Now place the dish in the oven and bake the fish for about 15 minutes at 375 degrees F. Meanwhile, take a pan, add orange rind, salt and water in it and keep it to boil. Then mix couscous in it. Cover the pan and keep it aside for about 5 minutes. Then add pimento and chickpeas in it. Now take a serving dish, arrange couscous on it and place cod on the top of it and then put cooking juice with a spoon over the codfish. Now the dish is ready to serve.

Ingredients

  • Dried salted codfish (2 pounds)
  • Butter (3tbsp)
  • Hard-cooked eggs
  • Chopped (4)
  • Red pepper flakes (1 1/2tsp)

  • Fresh parsley
  • Chopped
  • Divided (1/2c)
  • Garlic
  • Chopped

  • Thinly sliced yellow onions (2)
  • Yukon gold potatoes (4)
  • Pitted black olives (10)
  • Pitted green olives (10)
  • Freshly ground pepper (to taste)

Take salted codfish; soak it in cold water for about a whole day, Change the water several times. Take a large pot, place it overheat. Add water in it and keep it to boil and then add soaked fish in it and boil it for about 5 minutes or until it gets flake easily with a fork. Now take out cod from water and reserve water for boiling potatoes. Take off the skin and remove bones from fish. Take a large bowl, put fish in it and flake it into pieces and then keep the bowl aside. Take a bowl of small size; add olive oil, 1tablespoon of parsley, black pepper, red pepper flakes, 1 clove of garlic in it. Mix all the ingredients well and then pour the mixture over the dish in the bowl. Toss it lightly to coat the fish. Now heat the oven to 350 degrees F. Put potatoes in the reserved water and keep them to boil for about 20 minutes until they become soft. Drain them, peel them and then cut them into slices of ¼ inch. Meanwhile, take a large frying pan, place it over medium heat and then melt butter in it. Add onions in melted butter and sauté them until they get a golden color. Add 1 clove of garlic in it and mix it with onions and then keep it aside. Take a baking dish of 8*11 inch, grease it, place a layer of potato slices in the bottom of the dish, spread half of the cod over it and then spread half of the onions on the top. Repeat the layers. Now place the dish in the oven and bake it at 350 degrees F for about 15 minutes until the cod get light brown color. Then take it out from the oven and decorate it with black and green olives and hard eggs and then sprinkle the rest of the parsley over it.
